Michael’s chocolate and Guinness sponge recipe

Delicious, warming and with a good dash of fun – the Chocolate and Guinness cake is a much loved classic and features on our new Winter menu. Michael has given it a bit of a twist and is delighted to share this recipe with you.
Chocolate and Guinness Sponge
Ingredients
230g unsalted butter
450g dark soft sugar
4 eggs
340g plain flour
1 tsp baking powder
110g cocoa powder
380ml Guinness
White marshmallows
Ice cream of your choice to serve (we serve with Irish whiskey flavour)
Method
In a stand mixer, or mixing bowl, combine the butter, sugar and eggs and mix well.
Add the flour, baking powder and cocoa powder and mix gently until it all comes together.
Now add the Guinness slowly, while continuing to mix.
Pour into greased moulds (baba moulds if you have them) and bake at 140c for 40-45 minutes, or cover well with clingfilm and steam for 1 hour.
Once cooked, turn out and top with white marshmallow – your sponge should look like a pint of Guinness!
Serve with ice cream.
