Mrs Temple's Cheese

Cheese is hand-made at Copys Green Farm, Wighton, Norfolk, using milk from the award-winning Chalk Farm Herd, bred and nurtured by John Temple for over fifty years.

Wighton Cheese - A soft cheese, made to a fenland recipe, the curds drained for 24 hours under their own weight, before being dusted with salt. 180-240g rounds bearing basketwork pattern.

Melton - Made to a mozarella recipe the curds are kneaded and stretched by hand. Melts to releases a buttery oils which enhance the flavour of your italian-style recipes! 150-300g balls.. Received a Bronze Award at the 2002 British Cheese Awards.

Walsingham - A pressed matured cheese. Ideal for a real Norfolk ploughmans’ lunch! 10 litres of milk in every kilo. Wedges 180-300g. Whole cheese 2.8-3kg.

PRUDENS QUI PATIENS - The origins of the family crest - the ostrich standing on the Coat of Arms - are fascinating.  During the time of the celebrated Lawyer, Sir Edward Coke his "Digests of Law" suggested the ostrich, due to its reputation of having a cast iron digestion.  The surname Coke was sometimes spelt "Cook" as it is pronounced today.  In Latin the work Coquo means not only Cook, but also digest.  Coke's motto was "Prudens Qui Patiens", the Prudent One is the Patient One".  A further three words highlight his wit " etemin durissima coquit" - "because he digests the very hardest things."
